We recently declared bacon to be our editor's pick for top trendy ingredient of 2008. To honor the new titleholder, I thought I'd pay homage to my favorite ingredient by making a dish that highlights its pure essence.

Last week, I woke up (no surprises here) slightly hungover. It seems I had played one three too many rounds of beer pong. As I lay in bed, my head pounding, I suddenly realized I was in the best place in the world to be hungover: my parents' house — where the fridge was always stocked!

Due to its incredible popularity and extreme exposure (it's been seen everywhere from wrapped around hot dogs to dipped in chocolate) — bacon is our editor's pick for favorite trendy ingredient.

In many respects, 2008 was a rough year, but let's not forget that there were some great things that came out it — namely, the rise of bacon. Along with its brother, pork belly, we declared bacon to be one of the trendiest ingredients of the year. Hopefully, its distinct smoky flavor and marbled, chewy-crispy texture will make it a timeless classic.

A friend of mine, who fits the classification of hipster to a T, also happens to love all things gourmet.
